Filled with creamy avocado and juicy tomatoes, these cheesy quesadillas make a delicious, nutritious, and satisfying meal– in under 20 minutes!
Avocado Tomato Quesadillas
Ingredients
- 2-4 whole wheat tortillas
- 1 ripe avocado
- ½ teaspoon garlic powder
- ½ teaspoon curry powder
- salt to taste
- 1-2 tomatoes, sliced
- mozzarella cheese shreds
Directions
- Mash your avocado together with the garlic powder, curry powder, and salt, and spread evenly among the tortillas.
- Layer the tomato slices on top of the avocado and sprinkle with your desired amount of cheese.
- Grease a pan with cooking spray. Fold your tortillas and cook one at a time over medium heat until the cheese melts and the tortilla is browned on both sides.
This recipe is vegan with the appropriate cheese shreds.
Yum!! This is right up my alley. I love avocado in my quesadillas!
