Chocolate Cranberry Cookies

These soft chocolate cookies are filled with rich chocolate chips and sweet dried cranberries– great for dessert, but healthy enough for breakfast!

This is one of my favorite flavor combinations– chocolate is so good at complementing the light tartness of dried cranberries. The super soft texture of these cookies make them especially appealing to me in the morning, and though I’m never one to have a problem with eating cookies for breakfast, these are particularly guilt-free!

Chocolate Cranberry Cookies

Yield: 12-14 cookies

Ingredients

  • ¾ cup flour
  • 1/3 cup brown sugar or granulated sweetener of choice
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • dash salt
  • 3 tablespoons almond milk
  • 2 tablespoons unsweetened applesauce
  • 1 tablespoon coconut oil, melted
  • ¼ cup dried cranberries
  • 2-3 tablespoons mini chocolate chips

Directions

  1. Preheat your oven to 350° and grease a baking sheet with cooking spray.
  2. In an electric mixer, combine the flour, sweetener, cocoa, baking powder, and salt.
  3. Add the milk, applesauce, and coconut oil and mix till combined.
  4. Fold in the cranberries and mini chocolate chips.
  5. Drop spoonfuls of the cookie dough onto the baking sheet and flatten.
  6. Bake for 6-8 minutes, then transfer to a wire rack to cool completely.


These cookies are vegan with the appropriate chocolate chips.

  2. So, I love to read. I’m always reading something and I’ll try almost anything. I cannot get into short stories. And instead of shrugging and accepting that they just aren’t my thing, I take it as a personal failing. I will learn to love short stories! I will keep trying! …It hasn’t happened yet.   4. I know that a lot of people hate the word moist– I do, too– but are there any other words you can’t stand? I inexplicably hate tasty. Weirdly, it doesn’t really bother me when others say it, but I can’t bring myself to use it. Which can be a challenge when you’re blogging about food!

  1. These look delicious Courtney! I remember having a cookie like this when I was young at Christmastime. It was sooo good! Now I can have a vegan version – yay! 🙂

    I’m not into short stories either. I was an english major and now am a librarian and I still can’t get into them. I need something more substantial so I hear you lol.
